I've been vegan for around 9 months now and it's caused me to hugely change my eating habits and try new foods. Turns out vegans don't only eat salad, who knew? But it's good news because nobody wants kale, cucumber and lettuce for breakfast.
Breakfast is my favourite meal of the day, but also either my most boring, or most exciting meal. When I have all the ingredients, I love having a BIG bowl of porridge with all the trimmings. I love the oat-so-simple golden syrup packets with soy milk (or whatever milk I have at the time), with:
- half a chopped banana
- 3 sliced strawberries
- tablespoon of peanut butter
- 5-7ish roughly chopped almonds
- tablespoon of mixed seeds, sprinkled (I premix these in a jar with chia, flax and pumpkin seeds)
I realise this is a lot of things to have in one bowl, but it is so filling and also quite healthy. If you wanted to be extra healthy you could substitute the oat-so-simple golden syrup packet with regular porridge oats, to cut out some extra sugar, but I have a sweet tooth! It seems like a lot of things to put in, but all of these foods have their own health benefits and/or taste amazing!
Peanut butter, especially natural peanut butter is full of healthy fats and protein. Strawberries are a great source of vitamin C and are packed with antioxidants. Bananas are also a fab source of vitamin C, whilst also containing manganese which is is good for your skin and have benefits for your heart and digestion. The almonds are also a source of healthy fat and protein, and the seeds have different benefits, which you can cocktail for whatever you want.
I find that by mixing all these things in to my porridge, it's really easy to get all their health benefits, and tastes a lot better than it would deconstructed!
Also, chocolate shreddies are vegan so that's what I tend to have on weekends, far less healthy but really quick, simple and delicious!
